Cave Aged Mellage - 1/2# Pieces

Cave Aged Mellage Cheese

A vibrant flavor of sheep, goat, and cow milk melts in your mouth.  It is complimented with an earthy finish due to the cave aging.

Affinage:  Aged at least six months and cured in caves.

Flavor Profile:  Complex flavor from sheep and cow milk with a slight goat finish.  Enjoy the flavor melody as it changes across your palate.

Body:  Exterior of cheese will be brown and uneven in color.  Interior is shades of caramel.  Body is firm with a slightly dry texture.
